Breakfast Sushi (Whole30 Friendly)

“Sushi” for breakfast anyone?

Ingredients
2 eggs, 2 egg whites
1 avocado, mashed
1/4 cup brocolli
Half a zucchini cut into strips
1/4 cup turkey sausage

Method
Heat a large frying pan to med-high heat.
Scramble your eggs together and cook them like a large crepe. If its to big to flip, transfer to a baking dish and broil for 1-2 mins on low.
Spread your avocado on the eggs, this will help it stick when your roll this together.
I sautéed my zucchini in strips, but you can have them raw.
Cut up your turkey sausage and cook.
Process your broccoli in a magic bullet or in another mini food processor and steam in the microwave for 1 min.
Assemble your rolls. Sprinkle the broccoli “rice” over the avocado spread, add your zucchini and turkey sausage and roll.
Carefully cut your rolls and serve with your choice of dip. I had mine with franks red hot since its technically whole30 approved 🙂
