Homemade Protein/Energy Bars

If you’re looking for an easy way to up your protein intake, try making your own homemade protein bars!
It’s super easy – make it a part of your weekly meal prep. Throw some protein, nut butter and fillings of your choice together and tada! Something easy you can snack on throughout the week.

These protein bars are vegan, gluten free and have no added sugar. Enjoy!

Ingredients
Makes 4 protein bars
2 scoops of Chocolate Vega protein
*You can use any protein you like
3 tbsp enjoy life mini chocolate chips
3 tbsp dried cranberries
3 tbsp chopped pecans
1/2 cup smooth almond butter
1/4 cup coconut oil, melted

Method
Mix dry ingredients together in a bowl.

Add almond butter and melted coconut oil and mix until combined. This step may take a while but I promise you, everything will combine.

Add mixture to a baking pan lined with parchment paper. I used a bread loaf pan.
Press mixture down evenly with spatula or your hand.
Refrigerate for at least half hour before cutting into bars.
Keep bar refrigerated until you’re ready to enjoy!
