Apple Pie Pancake Topping

For the pancakes I used Bob Red Mill’s 10 grain pancake mix – worked perfectly with this topping. Tasted like apple pie for breakfast :):)
Feel free to use whatever plain pancake mix you like!

Ingredients
2 apples, cored and sliced
1 tbsp maple syrup
1 tbsp cinnamon
Coconut oil
3/4 cup coconut milk

Method
Toss apple slices in maple syrup. Add some coconut oil to a skillet over med-high heat.
Add apple mixture and cinnamon and sauté until apples begin to soften.
Add coconut milk in 1/4 cup at a time, and continue to stir. After about 5 minutes apples will soften and mixture will thicken.

This tastes amazing alone, but I highly suggest pairing it with some pancakes 🙂

    I like the idea of coconut milk with the apples…..sounds great for pancakes!

      Hey Jordyn! I got the pancake mix at Loblaws. Superstore should have it too. Also Healthy Planet at VP + Ellesmere has tons of Bob’s Red Mill stuff!
