It's not a diet. It's a lifestyle change.
For the pancakes I used Bob Red Mill’s 10 grain pancake mix – worked perfectly with this topping. Tasted like apple pie for breakfast :):)
Feel free to use whatever plain pancake mix you like!
2 apples, cored and sliced
1 tbsp maple syrup
1 tbsp cinnamon
3/4 cup coconut milk
Toss apple slices in maple syrup. Add some coconut oil to a skillet over med-high heat.
Add apple mixture and cinnamon and sauté until apples begin to soften.
Add coconut milk in 1/4 cup at a time, and continue to stir. After about 5 minutes apples will soften and mixture will thicken.
This tastes amazing alone, but I highly suggest pairing it with some pancakes 🙂
