In your face Starbucks!
So glad I found a Paleo version of one of my favorite guilty pleasures 🙂
Ingredients
1/3 cup coconut flour, sifted
1/2 tsp baking powder
1/4 tsp salt
4 eggs
1/4 cup pure maple syrup
2 tsp vanilla extract
2 tbsp fresh lemon juice
2 tsp lemon zest
1/4 cup coconut oil, melted
2 tsp poppy seeds
Method
1. Preheat oven to 350.
2. Place all dry ingredients except poppy seeds in a bowl and mix to combine.
3. Add wet ingredients except coconut oil and mix well with a hand mixer.
4. Pour coconut oil in slowly, and mix by hand.
5. Stir in poppy seeds.
6. Bake for 20-25 min, or until golden brown and center springs back when pressed.
7. Let cool and devour slowly.
How many calories are in each muffin?
Not sure! I don’t count calories so I never calculate them. You can use myfitnesspal to calculate calories!
what can i use instead of coconut oil?! (doesn’t have to be paleo)
Use 1/8 cup extra virgin olive oil, or any other butter/oil of your choice 🙂

Anyone know what to use instead off eggs? Doing the AIP Paleo Protocol
I tried making these tonight and had a bit of trouble when adding the coconut oil.It seemed like after I added the melted oil it began to cool and harden. I continued to stir it and put it in the oven quickly, but when I took them out they were incredibly oily, and the bottom of the muffin pans were filled with oil! I have no idea where I went wrong. Any tips?

I doubled the recipe and made 12. Great recipe I will make this one over and over again… its already a family favourite.
