What do you do when you have an abundance of super ripe bananas? I make banana bread, or banana pancakes, or sometimes I will freeze them to add to smoothies, or to make some delicious mango banana ice cream!
Yesterday I came home after the gym and decided I was going to make up a new recipe for some banana bread and throw the rest of the nutella I had in my pantry in there so it could stop staring at me LOL After a few taste testers gave me positive feedback – here is the recipe. Enjoy!
Ingredients
Wet:
5 small very ripe bananas
2 eggs
1/4 cup coconut oil
1/4 honey – optional, I added it but it’s not necessary
1 cup Nutella, divided into two 1/2 cup portions
1 tsp vanilla extract
Dry:
3 cups oat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
Method
Preheat oven to 350.
Grease a loaf pan with coconut oil, or spray with non stick spray. Use parchment paper if you like.
Mash bananas in a bowl. Add the rest of the wet ingredients, excluding the Nutella and combine.
Add all dry ingredients to a bowl and mix together.
Add dry mixture to wet, and mix together.
Pour half the batter into the cake pan. Pour 1/2 cup of the
Nutella over the batter. You may want to warm your Nutella up for a few seconds in the microwave before doing this.
Add the rest of the batter and then drizzle remaining Nutella on top.
Bake for 1 hour, or until it passes the toothpick test.
Let loaf cool for at least half hour before slicing. Enjoy!
