Blueberry Lemon Muffins (Paleo)

I’ve had blueberries in my fridge for a few days now. I was going to make pancakes with them, but I just don’t have the time for fancy breakfasts these days – so I took a break from my paperwork today to make these wonderful little muffins.

Recipe from my new Pratical Paleo cookbook.

Makes 12 muffins

Ingredients
6 eggs
1/2 cup melted coconut oil
1 tsp vanilla extract
1/4 cup maple syrup
1 lemon, juice and zest
1/2 cup coconut flour
1/2 tsp sea salt
1/4 tsp baking soda
1 cup fresh blueberries

Method
Preheat oven to 350.
Whisk eggs, coconut oil, vanilla extract, maple syrup, lemon juice and zest together in a large bowl.
Sift in coconut flour, sea salt and baking soda and stir until well combined.
Fold in blueberries and pour batter into muffin cups.
Bake for 35-40 min.
Enjoy!
