Banana Chocolate Chip Bread Pancakes


I’m going on vacation today, so I had try to use up as much ingredients as I had on hand before I leave, and this was the result. Soft, fluffy, SUPER moist banana bread pancakes. With chocolate chips. Happy freaking vacation to me!

Gluten + Nut Free / Makes about 10 pancakes

3 ripe bananas
2 tbsp coconut oil
1 tbsp honey
1 egg, 2 egg whites
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
1 cup oat flour
1 tsp baking soda
1/2 tsp salt
1/4 cup enjoy life chocolate chips (optional)

Mash bananas in a large bowl.
Add coconut oil and honey and mix well.
Whisk in eggs, cinnamon, nutmeg and vanilla.
Mix in oat flour, baking soda, and salt.
Fold in chocolate chips. Blueberries would work amazing in this too.
Laddle onto a heated griddle greased with a bit of coconut oil 1/4 cup at a time.
Cook on medium high heat for about 1 min on each side.
