Paleo Banana Nut Porridge

To all my paleo people – you will never miss porridge again. I promise you this is amazzzzing. Really filling too, so a great way to start off your day!
Original recipe from All Against Grain.

Ingredients
1/4 cup raw almonds
1/4 cup raw pecans
1/4 cup raw cashews
Pinch of salt
1 cup coconut milk
1 tsp cinnamon
1 small ripe banana

Method
1. Soak nuts over night in distilled water, with a pinch of salt.
2. In the morning, drain nuts and rinse 2 or 3 times or until water becomes clear.
3. Add nuts, cinnamon, coconut milk and banana to a high speed blender. I use the ninja and it worked great. Blend until smooth.
4. Transfer mixture to a saucepan and cook for 5 mins over medium heat. It will start to thicken. Makes 2 servings. It may not look like much but it is really filling.
Top with desired ingredients, enjoy!

    Is the reason you soak the nuts to make them softer or “wake them up” so to speak!?
