Paleo Apple Raisin Muffins


I love days off – I get to stay home all day and food experiment:)
Yesterday we had a huge snowstorm, so I got to lounge around all day! wahooo!
Looking outside at the snow falling all day really had me craving warm comforting flavors – I mean, what’s more comforting than apples and cinnamon? Throw some raisins in and you got yourself one delicious muffin.

Inspired by PaleOMG once again!
Ingredients – Makes about 9 muffins
1 cup almond meal/flour
1 tbsp cinnamon (more if you like)
2 tbsp coconut flour
1/2 tsp baking soda
pinch of salt
3 eggs
1/4 cup coconut oil, melted
2 tbsp maple syrup
1 apple, cored and diced
1/4 cup raisins

Preheat oven to 350.
In a bowl mix together almond meal/flour, cinnamon, baking soda, salt and coconut flour.
Once that mixture is well combined add eggs, coconut oil, maple syrup and mix well.
Fold in chopped apple and raisins.
Spoon mixture into lined muffins tray. Bake for 25-30 mins.

Enjoy. One at a time.
