I LOVE experimenting with desserts. I wanted to make almond cookies, with no flour. Threw this recipe together and absolutely love how crunchy and chewy these turned out! Oh, and it’s SUPER easy to make!
2 egg whites
3/4 cup almond slivers
1/4 cup maple syrup
1/4 tsp vanilla extract
PINCH of salt
Preheat oven to 350. Line a cookie tray with parchment paper. You will need to peel the cookies off the parchment paper after they are done cooling, so you may want to grease it lightly.
Mix all ingredients together in a bowl.
Spoon mixture 1 tbsp at a time onto the parchment paper. Use the back of a spoon to spread out the mixture into a circle. Try not to make them too thin.
Bake for 20-25 mins, or until edges are golden brown.
Let COOL for 10 mins and peel off the parchment paper and transfer to a wire rack.
