1 small ripe banana
2 egg whites
1/4 cup unsweetened almond milk
1/2 cup almond meal/flour
1/2 tsp cinnamon
1 tsp baking powder
Pinch of salt
1 tbsp coconut flour
Enjoy life chocolate chips
Coconut oil for frying
Mash banana, add egg whites + almond milk and whisk to combine.
Add almond meal/flour, cinnamon, baking powder, salt, and coconut flour last.
Cook like regular pancakes in a lightly oiled frying pan.
In a separate frying pan heat up some coconut oil over medium high heat.
Sauté sliced persimmon for about 1 min on each side. Layer between pancakes with chocolate chips.
