It's not a diet. It's a lifestyle change.
I had so much broccoli that I wanted to use up quickly. I thought about just eating it raw, or making a stir fry with it.. then decided to do something I’ve never done. Make a broccoli soup! After searching the web for a few broccoli soup ideas, I threw this recipe together. Quick and easy and so yummy!
2/3 cup chopped onion
6 cloves garic, minced
1/2 tsp cumin
1/2 tsp paprika
1 tsp black pepper
1 tbsp extra virgin olive oil
3 cups low sodium chicken broth
3 cups broccoli florets (fresh or frozen)
1 can of light coconut milk
Goat cheese for topping (optional, not paleo)
Sautee onions and garlic in olive oil over high heat until onions become slightly translucent. Add chicken broth and spices and bring to a boil. Add broccoli and let boil over medium heat for 10 mins, or until broccoli becomes tender.
Transfer soup into a food processor and pulse until it is smooth is smooth.
Put the mixture back into the pot, add coconut milk and boil for another 5 mins.
Top with goat cheese, or spices!
