Cucumber Bites

Looking for a quick lunch idea? Try these out!

Ingredients for 18 Cucumber Bites

Cucumber – sliced into 18 pieces
2 hard boiled eggs, sliced
1 can of tuna
1/2 avocado, mashed
1 green onion, chopped
Mustard, black pepper, salt and cayenne to taste

Method
Assemble your bites by using 1 cucumber slice, 1 slice of hard boiled eggs and top with tuna mixture.
Tuna mixture – add avocado, green onion, mustard, spices and tuna into a bowl. Mix well. Mixture should make 18 portions.

Enjoy!
