Thursday’s winner of my Instagram Challenge #dieffstreats was @healthyalways with her no sugar added, raw lemon, cranberry, and pistachio balls. Doesn’t that sound like the most incredible clean Christmas treat?!
Recipe is gluten free, vegan, has no added sugar, and dairy free
3/4 cup almonds
1/2 cup pistachios
pinch of salt
8 medjool dates (make sure you pit them!)
1 tbsp lemon zest
1/4 cup dried cranberries
Blend almonds, pistachios, and salt until coarsely chopped in a blender.
Add dates (pitted) and lemon zest and blend until mixture starts to stick together.
Add dried cranberries, and pulse briefly so the cranberries are just mixed through.
Scoop mixture out and roll into a dough. Refrigerate for an hour.
Roll into small balls, and garnish in almond meal.
