Paleo Banana Pancakes with Cinnamon-Date “Caramel”


Ok, so I know pancakes are not Whole30 recommended. The whole point of the Whole30 is to try to get you to get rid of your junk food cravings, you’re not supposed to “paleo-fy desserts” or anything fun. There’s a whole article on it called “Sex With Your Pants On” on the Whole9 website – all you Whole30ers.. check it out. I bent the rules making these. All ingredients are still Whole30 approved and they were incredible. If you’re doing the Whole30 and feeling a little rebellious (and if you’re having dreams about pancakes) give these a try. =P

Whole30 Friendly Ingredients
Pancake Ingredients (for one serving)
1 very ripe banana, mashed
1 egg
1 egg white
pinch of cinnamon
pinch of nutmeg
1/4 cup almond meal/flour
1 tbsp coconut flour

Mix banana, eggs, and spices together well. Add almond flour and mix, then coconut flour and mix.
Coconut flour tends to thicken batters, so always at it last.
Spoon mixture onto a lightly oiled skillet over med-high heat and let cook for about 1 min on each side.

Cinnamon Date “Caramel” Ingredients
*Tweaked recipe from PaleOMG
15 dates
1/4 cup coconut milk
1 tsp cinnamon
1 tsp vanilla

Soak dates in hot water for 15 minutes.
After 15 minutes transfer just the dates to a small blender (magic bullet is great)
Add other ingredients and process until smooth and “caramel” color has been reached.
Refridgerate + enjoy with desserts, or layer them between these pancakes!

    do you use canned coconut milk or coconut milk from a carton?

      I used canned, I find it thicker than the carton milk. I’m sure it will work with carton coconut milk though – please let me know if you try it!

    How many pancakes does 1 serving make? I want to make these for a few people and didn’t know if I should double or triple this recipe

      It made 5 small pancakes for me – So one serving. The date caramel makes about 2/3 cup, should be good for about 4-5 servings!

    Hey! I tried this today, and I got a very thick batter.. This made it hard to pour into the pan, as I had to use a spoon to shape it into a pancake shape.. without ruining it. I’m certain I used the exact amount of ingredients!
    And after they were cooked, they felt really smooth (like uncooked?) in the middle..

    Any idea where I might have gone wrong? Should I maybe add a little coconut milk?
