I literally had half a cup of PB left, and since I’m re-doing the whole30 starting next week I decided to quickly find a way to use it.
1/2 cup organic peanut butter
1 tbsp cocoa powder
1 tbsp agave nectar
1/2 cup almond meal
Shredded coconut for coating (optional)
Enjoy life chocolate chunks for inside (optional)
Mix agave, peanut butter and cocoa powder together in a bowl.
Once combined, add almond meal and continue to mix. Mixture should form a big ball that you will be able to easily work with.
Using a 1/2 tbsp measuring spoon begin to scoop your mixture. Insert one Enjoy Life chocolate chunk into the center and roll into a ball with your hands.
Coat with coconut if you’d like and freeze for 15 mins.
Keep refrigerated after initial freeze.
