Cinnamon Swirl Pancakes (Paleo)


This idea was fully The Betty Rocker’s, and I modified it to make the swirl stand out, and came up with a coconut “frosting” that will make breakfast tastes like dessert ๐Ÿ˜‰

1/4 cup almond meal
1/3 cup coconut flour (any gluten free flour will work here if you’re not paleo)
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 cup pumpkin puree (I used canned, feel free to use homemade)
5 eggs
1/2 tsp vanilla extract
1/4 cup coconut milk

1/2 cup pancake batter
1 tbsp cinnamon
1 tsp cocoa powder
2 tbsp pure maple syrup

Coconut “Frosting”
1/2 cup coconut milk
2 tbsp pure maple syrup

1. Mix all dry ingredients for the pancakes in a large bowl.
2. Add wet ingredients and mix well with a hand mixer.
3. Take out 1/2 cup of the batter, mix with cocoa, cinnamon, and maple syrup to make your “swirl” batter. Put mixture in a ziploc bag and set aside.
4. Get your skillet heated on med-high heat. Cut off a small corner of your ziploc bag and begin to create a swirl smaller than your pancake will be. Let cook for about 10 seconds, then pour pancake batter on top. I used a pancake shaper to get mine perfectly round (Im a little OCD), and made another swirl after I poured the pancake batter on top. Cook for about 1 min (or until bubbles start to appear), and then flip.
5. To make the frosting, add 1/2 cup of canned coconut milk that has been refrigerated overnight with maple syrup and begin to whip with a hand mixer. Mixture will begin to get fluffy. This works best with full-fat coconut milk that has been refrigerated and separated from the liquid.

I didn’t need any more maple syrup while eating these, they were great with the “frosting!”


ENJOY with LOTS of syrup.
Batter makes about 8-10 small pancakes ๐Ÿ™‚

    Think you could sub mashed banana in place of the pumpkin? I’m out and these look scrumptious hehe
