It's not a diet. It's a lifestyle change.
I finally did it! I played around with this recipe SO many times OMG. I failed at it twice – but I was determined to come up with my own paleo pumpkin pancakes!
Batter makes about 16 mini pancakes, or 8 regular size
3/4 cup pumpkin puree
4 eggs or 8 egg whites (For lower fat)
2 tbsp agave nectar
1 tbsp coconut oil, melted
2 tbsp coconut flour or 1 tbsp coconut flour + 1 tbsp protein powder (If you want added protein)
2 tsp pumpkin spice
1/2 tsp baking soda
pinch of salt
1. Mix all wet ingredients together well. I use a hand mixer
2. Sift dry ingredients in and continue to mix well. Batter should be pretty runny. If it’s too thick, add a splash of almond milk – but mine was okay without it!
3. Pour batter onto a hot skillet a little less than 1/4 cup at a time. I used about 1/8 cup for mini pancakes. Let pancake cook for about 1-2 mins on each side, be patient with paleo pancakes they can be very difficult to flip.
Enjoy with lots of maple syrup! Or walden farms maple syrup if you’re watching calories!
