Mixed Berry Crisp


Obviously I was in charge of bringing a healthy dessert to Thanksgiving dinner – So I flipped through a few of my cookbooks and decided on this one.
Changed up the ingredients a bit to make it a bit more clean.

1 bag of frozen mixed berries, thawed (600gr, about 4 cups)
Zest and juice of 1 lemon
1 tbsp arrowroot
2 tbsp honey, divided
10 pitted unsweetened dates
1/2 cup gluten free oats (Bob’s Red Mill brand is good)
1/2 cup gluten free baking mix (Bob’s Red Mill brand is also good)
1/2 cup sliced almonds
1/2 tsp ground cinnamon
1/2 tsp nutmeg
3 tbsp coconut oil
Pinch of sea salt

1. Preheat oven to 350.
2. In a bowl, combine berries, juice and zest of the lemon, arrowroot and 1 tbsp of honey. Toss and put mixture in a baking dish.
3. In a food processor, chop up dates. Add all other in ingredients to the food processor and combine into a semi-dry crumbly mixture.
4. Evenly distribute mixture over berries.
5. Bake for 45 mins.

Serve with some greek yogurt if you’d like. šŸ˜‰
