Breakfast Muffins (Paleo)


Everyone and their dog has their own version of breakfast muffins. They are SO easy to make. I’ve made a few different kinds before, but these were hands down the best yet.
Recipe inspired by PaleOMG

4 strips of turkey bacon, chopped
Half a sweet potato, peeled and sliced into rounds (not too thin, and try to find a narrow sweet potato)
4 eggs
Coconut oil for frying

Preheat oven to 400.
Fry turkey bacon in a skillet with some coconut oil until crispy. Set aside.
Cook sliced sweet potato in the same skillet on medium heat. Let each side cook for about 2 mins.
Assemble your egg muffins.
Place one sweet potato round in the bottom of your muffin pan, then some turkey bacon, more sweet potato and then 1 egg.
You can scramble your eggs if you like.

Bake for 15-20 mins.

Feel free to use chicken bacon, or regular bacon, you can add spices to the egg if you’re scrambling it, get creative!

    Making these now! I have left over ground turkey though, and white potatoes. I’m interested to see how they turn out!!
