Sweet Potato + Beet Hash (Whole30 Friendly)


This is SO easy to make, and one of the best side dishes I’ve ever had.
One of the best things about it, is that it uses leftovers which cuts your cooking time in half in the morning! Who doesn’t love to save time in the morning?!
Inspired by @fitnessandfaith check out his blog for drool-worthy dishes!

1 boiled beet, chopped roughly
1 small-medium sized sweet potato, chopped and prebaked
1 small onion, chopped roughly
salt + pepper to taste
extra virgin olive oil, to sautee in

Heat up EVOO in a large frying pan on medium high.
Add all ingredients and sautee until sweet potato begins to brown a bit. Should take about 10 mins.

That’s it!
Add a little pepper if you like it spicy 🙂
