Zucchini Fritters (Whole30 Friendly)


Original recipe from Livin’ Paleo – only thing I added was apple cider vinegar and onion powder.
They are SO yummy and so easy to make, I made them twice today!

2 Zucchinis
1/2 cup almond meal
2 eggs
1 tsp cumin
1 tsp onion powder
1 tsp apple cider vinegar
1/2 tbsp mint, chopped
salt and pepper, to taste
EVOO (for frying)

1. Wash and grate zucchinis, set aside
2. Mix together all other ingredients well in a bowl.
3. Squeeze as much liquid as you can out of the zucchini and add it to the bowl. Mix well.
4. Add EVOO to a frying pan and drop the batter in, flatten it out with a spoon. Fry for about 2 mins on each side.

Batter should make about 10 fritters!

    Could you use oat flour instead of almond meal?

      Yes, it should work fine! Using oat flour will make them non-paleo.

    Almond meal is not whole30. Otherwise recipe looks delicious!
