It's not a diet. It's a lifestyle change.
Original recipe from Livin’ Paleo – only thing I added was apple cider vinegar and onion powder.
They are SO yummy and so easy to make, I made them twice today!
1/2 cup almond meal
1 tsp cumin
1 tsp onion powder
1 tsp apple cider vinegar
1/2 tbsp mint, chopped
salt and pepper, to taste
EVOO (for frying)
1. Wash and grate zucchinis, set aside
2. Mix together all other ingredients well in a bowl.
3. Squeeze as much liquid as you can out of the zucchini and add it to the bowl. Mix well.
4. Add EVOO to a frying pan and drop the batter in, flatten it out with a spoon. Fry for about 2 mins on each side.
Batter should make about 10 fritters!
