Pulled out my handy dandy slow cooker last night and put it to use again! I love this thing, I don’t know why I ever stopped using it. I was craving roasted chicken last night,
so I bought a whole chicken, came up with a dry rub seasoning mix and stuck it in my good old slow cooker for 8 hours on low. This morning I had fall off the bone super moist roasted chicken – and lunch was ready before I even left for work!
1 whole chicken
1/2 tsp salt
1 tsp black pepper
2 teaspoons paprika
1 teaspoon thyme
2 tbsp garlic powder
1 tsp cayenne
1/2 tsp rosemary
1/2 tsp oregano
1 whole onion
Slice onion roughly and place at the bottom of your slow cooker.
Wash chicken WELL, using lemon juice or vinegar.
Combine all spices in a bowl and mix. Rub spice mixture all over your chicken, put some inside and underneath the skin as well.
Place chicken on top of sliced onions and set slow cooker to cook for 8 hours on low.
