Eggplant “Pizza” (Whole30 Friendly)


SO easy to make, and so delicious. Skipped the cheese to make it Whole30 Friendly, so add cheese if you’d like!

1 Eggplant, cut into discs.
Tomato Sauce
Various toppings – I used red onion and grilled chicken

Preheat oven to 350
Lay eggplant discs on a baking tray.
Top with tomato sauce and whatever toppings you like.
Bake for 15-20 mins on 350.
