Apple Cinnamon Omelette (Paleo, Whole30 Friendly)


Ive discovered a new love for fruits and eggs. This is incredible, a great substitute for french toast. Recipe from @livinpaleo

1 apple, sliced thinly (I used a mandolin)
2 eggs
1 tbsp coconut milk
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp nutmeg
Coconut oil

Lightly oil a large frying pan with coconut oil. Lay apple slices evenly and cook for 3-4 mins on med-high heat. Apple slices will begin to brown slightly.

In a bowl, mix together eggs, nutmeg, cinnamon, coconut milk, and vanilla.

Pour egg mixture evenly over the apples.

Lift edges of the omelette and let the uncooked egg run below.

Fold omelette in half, flip once and let everything cook through.

    Beautiful omelette! I made a creamy pear scramble this morning that was kind of french toast-esque as well. Fruit and eggs are a delicious combo!
