I woke up this morning craving pico de gallo! I’ve never made it before, and I didn’t have all the ingredients on hand but one of the best things about cooking is learning how to work with what you’ve got! Here’s a different spin on pico de gallo, which is super easy to make and delicious!
2 tomatoes, seeded and chopped
1/2 red onion chopped
Handful of watercress or cilanto chopped
1 tsp chili flakes, or 1 jalapeño minced
Juice of half a lime
Salt and pepper to taste
Mix all ingredients well. Leave in the fridge for about half hour for all the flavors to absorb – or eat right away!
