It's not a diet. It's a lifestyle change.
I wanted to try something different this morning, and I absolutely loved it! I think I will bake my omelettes if I have the time from now on! This was so ridiculously easy to make, and perfect if you’re having company over for breakfast!
2 cups of chopped veggies (I used half a zuchinni, 4 pieces of brocolli, 6 asparagus)
Handul of spinach leaves
Whatever spices you like! I used black pepper, salt and cayenne
Preheat oven to 400.
Line your baking dish with parchment paper or grease with a bit of EVOO.
Layer the spinach leaves on the bottom of the dish.
Sautee vegetables for a few mins on the stove. Don’t overcook them, they will continue to cook a bit in the oven.
Layer sauteed veggies on top of spinach.
Scramble together your eggs and pour them on top.
Top with sliced mushrooms and bake for 20 mins.
