2 cups homemade tomato sauce
1 cup sliced mushrooms
Preheat oven to 350
Peel and slice zuchinni lengthwise with a mandoline.
Slice eggplant widthwise with the mandoline.
Assemble half of the zuchinni in a large baking dish, just as you would lasagna noodles.
Pour half of the sauce on top.
Layer the eggplant slices on top, and mushroom slices on top of those.
Pour the rest of the sauce as evenly as possible.
Layer the rest of the zuchinni slices on top.
Bake for 30 mins.
