Lemon Coconut Tarts

I love being in the kitchen, it’s definitely an escape for me. I cannot believe what my kitchen experimenting has brought me to today. These are SO freaking delicious. Perfect texture, perfect flavor – both sweet and tangy. Gluten and egg free!
Definitely a must try.

Recipe makes 6.
Ingredients
Crust:
8 dates
4 gluten free graham crackers
10 macadamia nuts
1 tbsp agave nectar

Filling:
1/2 cup plain greek yogurt
2 tbsp coconut flour
Juice of one lemon
Zest of one lemon
1 tsp vanilla extract
1 tbsp agave nectar

Method
Preheat oven to 350.

Put dates, graham crackers and macadamia nuts in a food processor or magic bullet and pulse until everything is almost a flour consistency. The dates and nuts may be still chunky, that’s ok. It will add texture to your crust.
Transfer everything into a bowl and mix agave nectar in.
Press mixture into muffin liners.

For the filling, mix all ingredients except the coconut flour well. Once everything is mixed well, add coconut flour and fold in. Batter will be thick and spongy.

Spoon onto crust and press down to make sure you get in as much batter as possible!

Bake for 8-10 mins.

Take out of the oven and let cool, when cool to touch transfer to the fridge and cool for 1 hour.

They are now ready to enjoy!!
