3/4 cup coconut milk
2 tbsp vanilla extract
3/4 cup honey
1/2 cup almond meal
1/2 cup coconut flour
1/4 tsp salt
1/2 tsp baking powder
1/2 cup shredded coconut
1 cup dark chocolate chips
Preheat oven to 350.
Mix together eggs, coconut milk, vanilla extract and honey.
In a separate bowl mix coconut flour, almond flour, salt and baking powder
Combine wet and dry and mix well.
Fold in half of the chocolate chips.
Grease a muffin sheet and fill each to the top.
Sprinkle shredded coconut and the remaining chocolate chips on top.
Bake for 30 mins.. and enjoy!
