Paleo Muffins

Recipe from @livinpaleo, I was inspired by @nutty4nutrition on instragram

Ingredients:
4 eggs
3/4 cup coconut milk
2 tbsp vanilla extract
3/4 cup honey
1/2 cup almond meal
1/2 cup coconut flour
1/4 tsp salt
1/2 tsp baking powder
1/2 cup shredded coconut
1 cup dark chocolate chips

Method:
Preheat oven to 350.
Mix together eggs, coconut milk, vanilla extract and honey.
In a separate bowl mix coconut flour, almond flour, salt and baking powder
Combine wet and dry and mix well.
Fold in half of the chocolate chips.
Grease a muffin sheet and fill each to the top.
Sprinkle shredded coconut and the remaining chocolate chips on top.

Bake for 30 mins.. and enjoy!

    could you do egg whites instead or would you highly recommend regular eggs

    coconut milk from a can or would coconut milk from a carton be ok?

    These are seriously unreal. Thank you. They taste incredible. The recipe mentioned nothing about putting coconut inside the muffins? I put almost half a cup in the batter then just sprinkled a little extra on top. Amazing recipe. I called my mom just to tell her how good they were lol.
