Baked Zucchini Fritters

I love fritters, and these are a great alternative to fritters that are fried in a ton of oil.

Ingredients:

3 cups grated zucchini
3/4 cup whole wheat flour, or gluten free substitute for flour (Red Mill has a great one)
1/2 cup unsweetened almond milk
2 tbsp apple cider vinegar
2 tbsp EVOO
2 tbsp water
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp paprika
1/2 tsp black pepper
1/4 cup chopped green onion
2 cloves of garlic, minced

Method:

1. Mix all dry ingredients well
2. Mix all wet ingredients well, including grated zuchhini
3. Mix together wet and dry mixture, the batter should be very thick
4. Use a 1/4 cup measuring cup to scoop batter, form patties and fry in a non-stick frying pan for about 4 mins on each side. The fritters are done when they start to turn golden brown. They should be crispy on the outside, and soft on the inside.

I used yellow zucchini in this recipe, but feel free to use green.

I had mine with some plain greek yogurt and minced garlic. Have them with whatever dipping sauce you like!
