Spicy Chicken Vegetable Soup


I’m soo congested with a combination of allergies and a sinus cold. Who doesn’t love homemade chicken soup when they’re sick? This was so easy to make, and definitely helped clear up my sinuses – along with my neti pot!

Feel free to add whatever vegetables you like, this is what I used.

4 cups low sodium chicken broth
4 cups water
5 chicken drum sticks
1/4 cup chopped dill
1/4 cup chopped parsley
1/4 cup chopped green onion
1 cup baby carrots, halved
1 cup chopped celery
2 cups cubed sweet potato
1 tsp ground black pepper
1 tsp garlic powder
1 tsp chicken soup flavouring – I use Vegeta (I know, most have a ton of sodium, but it really helps bring out the flavour in the soup)
1 tbsp cayenne pepper (I put a lot because I wanted it to be spicy, put less if you can’t handle the heat!)
1 small chili sliced in half
1 cup frozen corn

Put everything in a large pot, except the corn. Bring to a boil. Let boil for about 5 mins, and then lower to med heat and cook for 1 hour.
After one hour, take out the chicken. Place on a plate/cutting board and begin to shred the meat off with a fork. Add only the meat back to the pot, no skin, no fat, no bones.
Add your corn and boil for another half hour.
It’s now ready to serve! Make sure not to eat the chili! .. Unless you like that kind of heat.. =P
